Abstract:
In this paper, the enzymatic hydrolysis process of wheat protein was studied, and the effects of hydrolysis time, enzyme dosage, substrate concentration, hydrolysis temperature and pH value on the degree of hydrolysis of wheat protein were analyzed, the optimum reaction conditions for enzymatic hydrolysis of wheat protein were as follows: substrate concentration 5%, enzyme dosage 50Lapu/g, hydrolysis time 6h, hydrolysis temperature 50 ℃,pH 6.0.
